Cheesy Venison Sausage Strata

Along with our company that came to visit a couple of weeks ago came a delivery of venison from Da, and we've been eating venison like it's going out of style ever since. We've got to get tired of it soon, don't we? You'd think. I have a feeling, though, that we might run out before we actually get sick of the stuff.

Somehow I've managed to keep things quite fresh with all of this venison eating. In the last week or two we've had it pan-fried, grilled and even
slow cooked. All of those dinners were made with ground venison, venison steaks or venison roasts - all variations we've had before.



Tonight, though, I pulled out a package I'll admit I was a bit hesitant to cook: venison sausage.

Bacon & Egg Muffins

A Bacon & Egg Muffin and a Low-Carb "Faux" Waffle. (Don't worry, the black stuff in the muffin is just pepper!)
Before work
Wife: So it looks like we're having breakfast for dinner tonight.
Husband: Does that mean we'll have bacon?
Wife: It can.
Husband: OK, then, we're having breakfast for dinner!

After work
Husband: Bacon and eggs for dinner, bacon and eggs for dinner!
Wife: Well, I wanted to make something like bacon and egg muffins.
Husband: What?
Wife: It's like scrambled eggs, but I'm going to bake them.
Husband: But they'll look like muffins. [hesitates] Alright. Just because I love you. Do whatever floats your boat.

Egg Sandwiches So Easy College Kids Can Make 'Em

I spent years and years not eating eggs. I can't even tell you what made me start eating eggs, but I think my college roommate K. Marie may have helped inspire my love of eggs. They made the perfect college breakfast. We made many an evening last until the wee hours of the morning. After we rose, when most of the world was gearing up for lunch, we'd hit up the all-you-can-eat breakfast buffet - and that included mounds of scrambled eggs. 

There were plenty of mornings I swore those eggs had healing powers. I won't get into the details now, but I'll say that sometimes you just need a good shot of protein in the morning; it was during those three and a half years I spent in undergrad that I learned eggs sometimes have just what it is that you need most.
