Pepper-Lime Chicken
Lime + tequila is one of my favorite combinations. Give it to me on the rocks and I'm a happy girl.
This post has nothing to do with margaritas, but it has a whole lot to do with lime - and making someone in this house very happy.
The husband doesn't like margaritas one bit. The man can't stand tequila. But he does like lime, and he's a big fan of pepper.
Pepper + lime + chicken? It's a goodun.
Pepper-Lime Chicken
From Better Homes and Gardens
Serves 2
3 chicken breasts
2 tablespoons lime juice
1 tablespoon extra virgin olive oil
1/2 teaspoon thyme
1/2 teaspoon black pepper
1/4 teaspoon salt
1 large elephant clove garlic, minced
Cut the chicken breasts into 1-inch pieces. Mix together the rest of the ingredients to form the marinade. Pour the marinade over the chicken and refrigerate for 30 minutes.
Preheat broiler. Drain chicken, reserving marinade. Place chicken under the broiler, about 4-5 inches, and broil about 6 minutes or until light brown.
Turn chicken pieces and brush lightly with remaining marinade. Discard the rest of the marinade. Cook another 6-8 minutes or until no longer pink (170 degrees F).
