Apple-Stuffed French Toast

We're looking at a chilly, rainy weekend here - at least that's what the weatherman says. It hasn't rained here yet, but we've been told it's coming. So the husband asked if I'd like to go on a date this afternoon. Do I have a keeper or what? We're heading out shortly for a trip to Super Target (which really does sound exciting to me), a matinee and dinner at one of our favorite steakhouses. But, you know me, it doesn't matter how much food I plan to consumer later, I must eat breakfast.

I made the husband a nice French toast breakfast and one for myself, as well, but I amped it up a little bit. Of course I offered to make the husband's breakfast just like mine, but he really wasn't interested. He liked his simple french toast just fine, and now we're ready to take on the day. I'm just hoping not everyone else and their brother has decided to go to the movies today, as well.

Apple-Stuffed French Toast
Slightly Inspired by Christine Avanti


1/2 medium apple, chopped
1 tablespoon Neufchatel cream cheese
2 slices Nature's Own Whole Wheat Bread
3 egg whites
a dash or two of cinnamon
a splash of vanilla
1 tablespoon raw honey

Chop about 1/4 of the apple into thin slices. (Not all of it will fit on the bread, so you can eat the rest on the side.)


Sprinkle a little cinnamon on the apple and heat it in the microwave for a few seconds.


Heat the griddle over medium heat, and scramble your egg whites with a little cinnamon and vanilla.


Coat one slice of bread with egg and place it onto the griddle. Top the bread with the cream cheese and thinly sliced apples. Coat the second slice of bread and place it on top of the first slice, making a nice French toast sandwich.


Toast until it's nicely browned, and top with honey. 


Serves 1: 296 calories, 5 g fat, 6 g protein, 20 g protein

  2. I think your husband either needs glasses or to clean them. Your stuffed French toast looks fantastic. I hope you had a great date night!

    Awesome.

    My dad wasn't a big cook, but he made the best french toast in the world. I can't imagine what it would have been like if he stuffed it with fruit!
