Celebrating Valentine's Day the weekend before the official holiday is becoming the norm around this place. We did this last year, too, I remember. Except last year the husband played golf the weekend before Valentine's day, and I made fabulous cannoli.
This morning we woke up to a thermometer that read 16 degrees. No golf for the husband today.
And when I tried my hand at making flourless chocolate cakes for us to have after opening cards tonight, they came out nothing like the cannoli from 2011. Flourless, in my book, does not yet equal fabulous.
So like any good wife who didn't get her husband a Valentine's Day gift but wanted to give him a little something special, I grabbed a bar of dark chocolate and my double boiler.
Who needs golf and cannoli and flourless chocolate cake when you have dark chocolate bark? That's right: no one.
Mint Dark Chocolate Bark
1 (4 oz.) dark chocolate bar
about 1/4 cup crisp rice cereal
1/2 teaspoon peppermint extract
Cover a baking sheet with wax paper.
Heat the chocolate in a double boiler, stirring with a wooden spoon until melted and smooth. Remove from heat and stir in the cereal and peppermint extract.
Spread the chocolate on the prepared baking sheet. A spatula will help you get the chocolate spread evenly. Chill in the freezer or fridge until solid.
Break the bark into pieces and serve.

That chocolate bark would make up for any mistake in the kitchen. It looks wonderful!
