March just happens to be one of my favorite months of the year. It's my birth month, as my momma texted me the other day: Happy birth month! I think you should celebrate all month long! Ginger that I am, I also love celebrating St. Patrick's Day - and wearing green. (My very best girlfriends wore green the day I married my best friend.)
But my love for March and all things green doesn't stop there. No, I also love to eat things that are green, so when I heard What I Ate Wednesday was going green, I was super excited. (Girl, you are so full of great ideas!)
3/2: Sweet and Sour Stir-Fry (Filled With Green Peppers!)
3/4: Buffalo Chicken Salad on Romaine and Topped With Celery Leaves
3/5: Toastachos (and More Green Peppers)
Did you like the toastachos? Yours looks yummy.
ReplyDeleteThey were so good! But I was too lazy to go to the store and pick up all of the exact ingredients the recipe called for, so I made a bunch of substitutes. I didn't think it'd be right to share all of my substitutes. Ha. (And I skipped the jalapenos!) Thanks for finding and sharing such a good recipe.
DeleteMmm...your Mexican food inspired eat looks yummy! Do you have a recipe posted for that? :)
ReplyDeleteI used this one as my inspiration: http://www.takingonmagazines.com/2012/03/toastachos-from-every-day-with-rachael.html. You can thank The Mom Chef for helping me find it. It was a winner in our house!
DeleteYum! I'm excited about this green month... should be a fun challenge!
ReplyDeleteIt shouldn't be a challenge, but it totally is! Every day I find that I'm saying to myself: "What vegetables have had I had today? Have I eaten anything green today? I need to get on that!"
