Peanut Butter Cup Cookie Dough Balls

I went to work with bed head today. The husband said it looked good, but I don't think I pulled it off quite like Jennifer Nettles. Either way, I rocked it. All. Day. Long. I just plain didn't care. The momma wouldn't have been proud, I know, had she seen me walking around with this mess on my head today. But I just woke up in one of those moods. I tried everything I could to make it better, including wearing a new favorite pair of black cowboy boots and my most flattering jeans. (Oh, how I love jeans with buttons on the butt pockets. Thank you, Banana Republic, for making my favorite jeans. You've made my days of pants shopping complete. I am no longer in love with your sister store. Why oh WHY, do you not make my size in tall, Gap?)

But not even the jeans could improve my mood. I acted like a Northerner on my drive to work, was starving all day, despite the 1,000 calories I'd packed in my lunchbox, couldn't stop watching the clock as I sat at my desk and cried listening to country radio on my way home. Seriously, Wednesday? Today just wasn't my day. And as happy as I was to get home to the husband and doggies, I wasn't excited about dinner; I'm almost always excited about dinner! At least, I'm usually excited to make dinner. But tonight we ate leftovers - again.

So after we loaded the dishwasher - more eco-friendly than hand-washing, to my surprise and contentment - I traded my denim for cotton and took my last shot at ending this day on a happy note. I turned on DMB and got out the chocolate. There's a chance I won't fit into my favorite jeans tomorrow, but that's OK. I'm rocking bed head on the couch next to the husband. He says my hair looks fine and that's good enough for me. When it comes right down to it, today wasn't so bad after all.

Peanut Butter Cup Cookie Dough Balls
Peanut Butter Cup Cookie Dough Balls
Inspired by Annie Eats

7 tablespoons butter
3/4 cup brown sugar
1 1/4 cup all-purpose flour
1 cup whole wheat flour
1 (12 ounce) can fat-free evaporated milk
1 1/2 teaspoons vanilla extract
8 peanut butter cups, chopped
1.45 ounces dark chocolate, chopped (1 individual bar)

Cream the butter and sugar until mixed well, about 3 minutes. Stir in the flours, milk and vanilla. Slowly add in the peanut butter cups and chocolate - or whatever you're craving!

As  you can see, we only went with p.b. and chocolate!
Cover the bowl with plastic wrap and store in the fridge until hard. (You'll want the mixture to firm up enough so you can make balls. This could take up to an hour.)

Remove the bowl from the fridge and spoon balls onto parchment-paper-lined baking sheets. Store in the fridge or freezer.

Makes 60 balls

  1. You are speaking my language. Oh boy - these look so tasty!!

  2. They weren't as sweet as most cookie dough truffles (I don't think) because I used evaporated milk instead of sweetened condensed milk. That didn't seem to bother us, though! We've been eating those little devils for two nights in a row now! Not very "clean" of us, though, huh? :)
