Meatless Monday: Mini Chickpea Burgers

My lack of posts last week may have made it look like I was on vacation but, alas, I wasn't. The truth is I fed the husband tacos one night, a quick pancetta grilled cheese sandwich another night and Friday was an eat-whatever-you-can-find-in-the-fridge night. Sorry, readers. Life happens. I'm sure you know how that goes.

But Monday is here once again, and that means I get a fresh start; another opportunity to feed the husband a healthy dinner sans meat. Last Monday the husband kept asking: "Are we having falafels? Are we?" I asked him if that's what he really wanted, and he told me he didn't even know what they were. "What do we even eat them with?" He asked me.


The thing is, he does know what they are because I've made them before. So since I didn't make the husband falafels last week, and I really haven't in a while, I thought maybe we were due. 



Mini Chickpea Burgers

1 (15 ounce) can organic garbanzo beans
1/2 cup red onion, finely chopped
1/4 cup carrot, chopped
1/4 teaspoon garlic salt
1/4 teaspoon salt
1 teaspoon lemon juice
1 teaspoon cumin
1/2 teaspoon dried red pepper flakes
2 tablespoons whole wheat flour
1 teaspoon olive oil


Preheat oven to 400 degrees F.

Pulse the beans through flour in a food processor until the mixture begins to come together. Slowly drizzle in the olive oil until everything is nicely chopped and moist. (Don't puree it, though!)

Form 8 patties and put on a baking sheet that has been lightly sprayed with cooking spray. Cook for 10 minutes, flip and cook for another 10 minutes, or until lightly brown.

Serves 4
164 calories, 2.5 g fat, 30 g carbs, 5.7 g fiber, 6 g protein

I think the husband remembered having something like this before, but he still asked me what he should eat with them. I ate mine on a bed of lettuce and heated a tortilla for the husband and told him to eat his chickpea burgers with lettuce, cucumber and tomato. He was even willing to try the nonfat plain yogurt I'd mixed with fresh chives from my garden. 

But he had a point: What should we have paired with our chickpea burgers?

  1. I never would have thought chickpea burgers could look so darn good!! I really gotta try these. Good question about what to pair with it. I like the ideas of the tortilla with lettuce and tomato with the yogurt sauce. It makes it slightly more hearty. :)

  2. I'm so into chickpeas lately! I've never used them to make burgers before, but am sure they wouldn't disappoint :)

  3. When I was in Israel we went into Jerusalem every evening for falafels. They were served in a pocket pita half with the tzatziki sauce or a hummus based sauce as well as the tomatoes and cucumbers. So, actually you came pretty close with the cukes, tomatoes and yogurt. :)
