Honey, That's Some Good Chicken


"Whoah," was the first word that came out of the husband's mouth after taking a bite of dinner tonight.

"What's that supposed to mean?" I asked him. "Is that a good 'whoah' or a bad 'whoah'?"

"Tell me what you put in the chicken first."

The man drives a hard bargain.



"Honey, apple cider vinegar, salt, pepper, oh, and thyme," I told him.

"Thyme! That's it," he said. "It's really good. I like it a lot." 

It was in that moment that the heavens opened up and I was forgiven for last night's dinner disaster. And all I had to do was marinate the chicken while the oven preheated and bake it until it reached 165 degrees F.

Honey Marinade
Slightly, Slightly Adapted From Fire It Up

1/4 cup honey
1/4 cup apple cider vinegar
2 teaspoons salt
1 teaspoon black pepper
1/2 teaspoon ground thyme

Whisk everything together and marinade as desired. Fire It Up suggests this marinade for veal, chicken and game birds.

  2. Don't you just love those times when you come up with something so easy yet so good. I could see this being a really good combo. of flavors! We have to experiment to try new things. My husband just rolls his eyes at me now when I tell him I'm playing with a new recipe creation. I don't think he looks forward to those dinners very much but sometimes, something really wonderful is created and those are the best nights ever! lol

  3. I love thyme, it's lemony and smells delicious. And the honey helps create a caramelized crust, Yummmm!!! Good Job. And if the hubby is happy even better, right?
