Egg-in-a-Hole Breakfast

Staying in bed until after the husband gets out of the shower, putting on my p.j. pants and the tan wool sweater Momma made me that I pair with just about everything, drinking coffee with my glasses on and cooking the husband breakfast makes for a good morning. 

That's not at all what I did this morning, but it's exactly what I did last Friday when I burned up my last PTO day of the year. I woke up slowly and played a little Words With Friends without feeling like I should be packing lunches instead. 

I did what I wanted. 

But the best part of all? Making sure the husband started his day off right, even if it meant flipping him up a breakfast that made him lift his eyebrows. His look said it all.

Egg-in-a-what are you going to make me eat?



I showed him a picture and told him it'd be like an egg sandwich.

"So why don't you just make me an egg sandwich?" He laughed.

Because I had the day off. Because I wanted to make sure he ate some protein for breakfast instead of just a granola bar out of the pantry. Because I wanted to.

But I spared him the details.

"Because this will be more interesting than an egg sandwich," I told him.


Egg-in-a-Hole

a little butter

a little nonstick cooking spray
1 slice rye bread
1 egg

Heat a griddle over medium heat. Spread a little butter on the griddle. Add a little cooking spray if you don't want to use a whole lot of butter.


Use a biscuit cutter or circular cookie cutter to cut a hole from your piece of bread. (What do you do with that circle you just cut out? The husband and I didn't know either. I just toasted it a little on the griddle and he ate it on the side. Silly.)


Add your bread to the skillet. Crack the egg into the hole you cut out. Sprinkle it with salt and pepper, if you like.


After about a minute, flip your egg-and-bread concoction.


Cook for another minute or two and serve.

  3. What a great idea! Breakfast is my favorite meal. One small trick that someone else shared with me...don't salt a fried eye until it is done...makes the egg white tuff. Oh, it's breakfast time. Gotta go.
