The Muppets have been singing "Ma Na Ma Na" in my head since last night. Yes, the song is getting a bit old now, 24 hours later, but I can't complain. I have the best boss in the whole world. She took my co-workers and I to the movies yesterday as a little Christmas bonus and, grownups that we are, we chose to see the new Muppet movie.
No, my job has nothing to do with the cinema or puppets. My boss is just that cool.
Popcorn and soda for everyone!
The husband mocked me a bit yesterday morning as I grabbed my coffee and computer bag to head out the door. I gave him and the doggies my usual "Momma's gotta go to work; I'll see y'all later." In true Christmas spirit he replied, "Shhhyeeeah, 'work.'"
I think he was just jealous he had to wait a couple more days until his holiday celebration at work 'cause I know he'll enjoy their potluck party just as much as we did our movie outing. All of his co-workers will bring food - some will even bring authentic Mexican dishes.
Seriously, the man's about to eat so well he probably won't be interested in my cooking until Christmas. At least I Know he'll be passing a dish of mine that he really loves.
So, Happy Christmas to the husband's co-workers (tomorrow)! Here's a goodun. And "Ma Na Ma Na," team.
Corn Puddin'
Recipe From my Momma (and I've no idea where she got it)
1 (15-oz.) can whole kernel corn, drained
1 (14-oz.) can cream-style corn
2 beaten eggs
1/4 cup melted butter
1/4 teaspoon ground pepper
1 cup cornmeal
Preheat oven to 350 degrees F.
Combine the corns, milk, eggs, butter and pepper. Add in the cornmeal and stir until just moistened. Pour mixture into a 2-quart casserole. Bake 50 to 55 minutes or until lightly brown and set in the center.
Makes 8 side dish servings.
