The husband and I are going on a week now of battling colds in our house. Actually, he went and got himself an ear infection; I just have the usual lovely early winter cold symptoms. Everyone at work seems to have them, too. It's awesome.
So the husband and I did some grocery shopping yesterday, but that was about it. Today was reserved for Christmas tree decorating - and then napping.
It was a simple day that called for a simple dinner that didn't require much work on either of our parts.
The husband suggested burgers, and this recipe seemed to meet all of our requirements: easy, quick, burgers.
Turkey Taco Burgers
Inspired by Taste of Home
1 egg, beaten
1/4 cup chopped onion
1 garlic clove, minced
1 tablespoon chili powder
1/2 teaspoon cumin
1/4 teaspoon pepper
1 pound extra-lean ground turkey
a sprinkle of salt
Mix the egg through the pepper in a large bowl. Add the turkey to the mixture and mix well.
Make four turkey burgers; sprinkle them with salt.
Grill until the burgers reach 165 degrees F. Serve on whole wheat buns with your favorite toppings.
We ate our burgers topped with just cheddar cheese, but I think next time they could use a little salsa. The burgers were a tad dry without any sauce, but they were still quite good - another plus because we have two left for tomorrow!

ReplyDeleteThese burgers were delicious, so I'd definitely recommend making them. I'm wondering if you should try making them under the broiler, though. The husband did complain a little about one of them falling apart on the grill. (He blames the turkey.)
