Looking Back: April 2011

Chicken With Lemon Sauce

This was definitely a month to love. From celebrating the husband's birthday with a homemade chocolate pie to hosting a cousin for a long barbecue-filled weekend and spending quality time with Momma, Ant and Little Big Brother right after that, enjoying homebrew and biscuits cooked over a fire pit - and learning about polenta - we made the most of the last 30 days.

In fact, we spent so much time out and about this month, there were weeks that I really let the blog go. (I truly am sorry, all 14 of you followers!) So how about I catch you up with a recipe that I know the husband and I loved this month but that I failed to share with you when it graced our dinner table?





Chicken With Lemon Sauce
Adapted From Roberto's Restaurant, The Arthur Avenue Cookbook
2 skinless, boneless chicken breasts cut into pieces
whole wheat flour, for dredging
2 tablespoons butter
1 1/2 teaspoons lemon zest
juice from 1/4 lemon
1/2 teaspoon black pepper
1/2 cup white wine
1 cups fat-free chicken broth
salt, to taste
1/4 lemon, sliced

Dredge the chicken in the flour and shake off the excess.

In a medium saute pan, melt the butter over medium-high heat. Saute the chicken for about two minutes. (According to Roberto, you're not looking for the chicken to brown.)

Stir in the lemon zest, lemon juice, pepper and wine. Simmer for another 2 minutes. Add the broth and simmer for five minutes or until the chicken pieces are cooked. Salt to taste.


Serve your chicken and lemon sauce with pasta or, as we did, with cooked wild rice. Garnish with parsley and/or basil leaves. 

And looking ahead, I've been debating whether to join Twitter. The husband will say this is just another excuse for me to play with my overly smart phone, but I think it might be a fun way to find out about local events (e.g., farmers' markets, beer tastings) and see what other people are cooking; I might even make a few new food "friends."

What do you think about Twitter? Do you tweet? (Should "tweet" be capitalized?) Is it a good way to stay connected or is it just a creepy way for everyone to know what I'm doing all the time?

  1. I love lemon with chicken. It is just the best combination of flavor. Hey, I'm one of your 14 followers...LOL. Life comes first. More important to be out there having fun than keeping up with a blog!
    I don't Twitter yet. Facebook has been good though. Not sure if I can handle doing Twitter AND facebook. If you try it - let me know how it goes for you.

  2. This chicken looks wonderful. It was a good month for you (and yes, I remember the chocolate pie!).

    I have a Twitter account and obviously am still tweet-challenged because I find it to be a waste of time, for the most part. I'm trying to learn how to maximize its effectiveness, but it's hard.
