You'd think, thanks to my clever titling skills, that this post is about the husband whining that I made bad potatoes for dinner - bad potatoes cooked with basil, to be exact. But our potatoes weren't bad at all. They were a little interesting, perhaps, and had a little flavor we aren't really used to with potatoes, but they were good.
So what's the husband's issue with me using basil all the time?
He just wants pesto.
Oh, Husband, maybe tomorrow. Tonight is all about potatoes, lemon and BASIL!
Lemon & Basil Potatoes
Serves 2
2 cups chopped red potatoes
1 teaspoon olive oil
1 tablespoon chopped basil
1/2 teaspoons lemon juice
1 minced garlic clove
salt, to taste
Chop the potatoes and put them into a large saucepan. Cover with cold water and salt; boil the potatoes and cook for 10-15 minutes, or until tender.
Mix the olive oil, basil, lemon juice, garlic and salt in a bowl.
Drain the potatoes and add to the bowl with the olive oil and seasonings.
Serve hot, at room temp or cold. We enjoyed our potatoes warm, but I think they'd be great cooler at a picnic, as well. Enjoy!

ReplyDeleteI don't think I've ever matched up potatoes with basil. Rosemary, yes. It definitely sounds like an interesting combination (though my favorite combo is potatoes and butter) :).
