Egg Sandwiches So Easy College Kids Can Make 'Em

5-Minute Egg Sandwich
I spent years and years not eating eggs. I can't even tell you what made me start eating eggs, but I think my college roommate K. Marie may have helped inspire my love of eggs. They made the perfect college breakfast. We made many an evening last until the wee hours of the morning. After we rose, when most of the world was gearing up for lunch, we'd hit up the all-you-can-eat breakfast buffet - and that included mounds of scrambled eggs. 

There were plenty of mornings I swore those eggs had healing powers. I won't get into the details now, but I'll say that sometimes you just need a good shot of protein in the morning; it was during those three and a half years I spent in undergrad that I learned eggs sometimes have just what it is that you need most. 




Breakfast is the most important meal of the day. I don't have to cite any source for that information beyond your mother. I'm sure she told you how important breakfast is - and Mommas know best. And as for the health benefits in eggs, well, according to Women's Health magazine, eggs are full of healthy goodness. 

So it makes sense that eggs can make a great healthy breakfast, doesn't it? But what happens if you're short on time in the morning, as I so often am, or you don't feel like running to the dining hall for scrambled eggs? I've learned the microwave can be a very handy appliance when it comes to making breakfast. 

And when I think about Little Big Brother and how he just finished his second week at college - and how he better be eating breakfast so he can stay focused on becoming an engineer when he grows up - I hope he's eating breakfast.

If Little Big Brother can't find himself an all-he-can-eat breakfast buffet, maybe he'll whip himself up one of these egg sandwiches and think of me. At the very least, maybe he'll make himself one of these egg sandwiches and just enjoy it. Who knows, there may be a morning this egg sandwich is just the thing he needs.

Easy Egg Sandwiches
Serves 1

1 egg + 1 tablespoon water OR 1/2 cup egg whites + a splash of water
cooking spray
salt and pepper
1 sandwich thin OR 1 whole wheat English muffin OR 2 slices whole wheat bread
1 teaspoon ketchup

Spray a bowl with cooking spray. Scramble the egg and water OR the egg whites and a splash of water in the bowl. Microwave the egg for 1-2 minutes while your bread toasts.

When the egg is puffy and cooked, slide it out onto your bread. Sprinkle it with salt and pepper and a little ketchup. 

Enjoy!
