Low-Carb Cheesecake Squares



In my dreams, I don't have to wash my hair every morning - my bangs don't stick straight up in the air when I get out of bed. I'm also the same weight I was the day I married the husband, and I can wear size 4 Banana Republic jeans without squatting to loosen them up in the butt area.

Chance doesn't bark constantly in my dreams, and he isn't afraid of thunder. Stella wriggles just as much in my dreams, but she doesn't snore.

We live within 30 minutes of Macy's in my dreams, and our parents live nearby, too. They take turns having us over for Sunday dinner every week.

In my dreams, I can eat just as many carbs as the husband and my body does everything it is supposed to with the insulin.

But this is real life.

My straightener can't always fix bed head, but hot water and a little shampoo sure can. And I know that fitting into my favorite jeans means Philly cheese steaks, though high in protein, should be a rare treat.

Chance has separation anxiety, barks when I hug the husband because he's jealous and hides in the bathroom when there's a storm. It's annoying. But when I'm sick, Chance will snuggle next to the bed all day. It makes me feel like he cares. And as cute as she is when she sleeps, we keep Stella's bed in the guest room because if she sleeps in our room, the momma doesn't sleep well.

In real life, I have to settle for Macy's commercials, Belk sales and Skype. And I may not be able to eat cheesecake, but I can eat these no-bake lemon cheesecake squares.

I guess reality isn't that bad after all.





Low-Carb Cheesecake Squares

1 cup water

1 box lemon gelatin
2 boxes neufchatel (low-fat cream cheese)
1 tablespoon lemon juice


Pour 1 cup boiling water into the gelatin and mix well. Stir in the cream cheese and lemon juice using a whisk or an electric mixer. (If you use an electric mixer, I know from experience this will take only a minute.) Mix until smooth. (You don’t want any lumps!)

Pour the mixture into an 8×8 glass baking dish.

Chill in the fridge until set.

Enjoy with fresh fruit, a touch of jam (if your diet allows) or with just a spoon!


Makes 12 squares, each with: 97 calories, 8 g fat, 2.5 g carbs, 0 g fiber, 3 g protein
