Menu Planning & Eating Carne Asada

People who have their lives together enough to plan the entire week's worth of meals impress me. I always imagine those people live in organized houses with clutter-free kitchens. Those people probably even have dogs that don't shed - or roll in dormant grass that gets stuck to their brown fur the day after, yes, the day after you just gave them a bath.

So in an attempt to be one of those people, I sat down this morning with a big cup of coffee and planned our dinners for the week. I'm happy to say I've got us eating a new meal almost every night this week. Who knows, maybe I'll even get around to cleaning up the pile of magazine pages I have sitting on the kitchen cart this week.




Sunday: Carne Asada
I found this recipe while scrolling through my South Beach Diet app. It's Phase 1 appropriate, according to the app, and has 13 g carbs per serving. Not bad. However, I still cut the amount of onion, avocado and salsa. I just couldn't help myself and lowered the number of carbs even more. Verdict: The husband and I both thought the steak came out quite well, although neither one of us really knew how we were supposed to eat the avocado, salsa and onions along with the steak. The recipe just said to serve them together. I ended up mixing mine all together, but the husband kept all of his dinner items separate. He thought it was all a bit odd. Next time we'll probably just use the steak marinade but skip the rest.

Tuesday: Fish With Citrus

Wednesday: Chicken Lettuce Wraps

Thursday: Corned Beef Sandwiches

Friday: Sauerkraut Pancakes and Pork Chops


Carne Asada
From the South Beach Diet app
Serves 4

1/4 cup fresh-squeezed lime juice
2 garlic cloves, minced

1/2 teaspoon ground black pepper
1/3 teaspoon salt
1 pound flank steak
1/2 red onion, sliced into 1/4-inch-thick rounds
1 teaspoon olive oil
1 small avocado, chopped
1/2 cup salsa

Marinate the steak in the lime, garlic, pepper and salt marinade for 20 minutes, flipping once.

Heat a grill to medium-high and grill the steak to your your liking.



While the steak is cooking, heat the oil in a small skillet. Saute the onion in the oil until the steak is ready.


Slice the steak into thin slices across the grain and serve with the onion, avocado and salsa.

  1. Can I eat at your house this week? :) My meals are definitely not planned. (The few times I have I always seem to stray from the plan anyhow.) The carne asada looks delicious!

    1. I've tried this before and failed, but I am very hopeful I can make it happen this week! We'll set a place for you. If I were you, I'd plan to come Wednesday. The photo of the meal in my Cooking Light cookbook looks very, very tasty!

  2. I never plan my meals that far in advance. We live by the seat of our pants too much for that. I do make sure we have one 'graze' day though; the day when everyone finds whatever leftover suits them best in the fridge.

    Your carne asada looks fantastic. I think the meat is cooked perfectly. I always had it served with tortillas, but since they were cutting the carbs, I guess that's why it wasn't offered as a serving suggestion. I guess the next best bet would have been using lettuce as a tortilla?

    1. You are a smart cookie. I should have let the carbaholic I live with eat a tortilla. I'm sure he'd have liked dinner even more had I done that!
