What I Ate Wednesday: Week 8 [and Garlicky Spinach]

TGIW. Yes, that's right, I just made that acronym my own. I'm so glad it's Wednesday, I can do that. Wednesday means I get to show you all of the crazy things I've been eating lately, and that always makes for a fun time. But today was a pretty great day overall - it was sunny and in the 70s, and I had a fabulous time eating my lunch and reading outside this afternoon. And the dogs are on a roll. They haven't done one naughty thing while I've been at work this week. (I totally just jinxed myself didn't I?)

But the absolute best thing about today? The husband comes home on Thursday from his business trip. And since Wednesday is just about over, that means we're that much closer to Thursday.
  



Monday's Meals

Breakfast: deli ham and scrambled egg whites and low-fat cream cheese; a chocolate protein shake made with almond milk; half caff



Morning snack: greek yogurt & blueberries; 1 tablespoon walnuts



Lunch: corned beef and swiss on a low-carb whole wheat wrap; coconut la croix


I hate to admit the first green thing I ate all day Monday was lime gelatin.


Dinner: coffee-marinated steak and steak

Snack: an apple, fat-free cottage cheese and a little protein plus cereal; a few almonds





That's most of what I ate Monday. I'm sure I'm forgetting to tell you about a thing or two, but you get the point. It was a pretty good day for me and food. (Those blueberries are to die for.)

But the highlight of Monday was definitely the husband eating spinach with dinner and actually liking it.

Garlicky Sauteed Spinach

From Cooking Light

1 1/2 teaspoon olive oil
2 garlic cloves
6 ounces fresh baby spinach leaves
1/8 teaspoon salt
1/8 teaspoon mixed-up pepper
1 teaspoon Parmesan

Slice the garlic. Heat the oil in a medium skillet over medium heat. Stir in the garlic and saute for about a minute or so or until the garlic turns a nice golden brown. 

Add as much spinach to the skillet as you can fit. Cook one minute, turning regularly with tongs. Once the spinach has wilted, remove it to a serving bowl and keep warm while you cook the rest of the spinach.

Top with spices and Parmesan right before serving.

  1. Mmm, garlicky spinach sounds delish! I really need to try the coconut la croix, I stick to the lime b/c I know I like them. :) Glad he comes home tomorrow, one more night- you can do it!

  2. Kudos to you on some really healthy eating. Yeah, the green Jello thing is a little off, but who cares. You totally made up for it with this spinach. It sounds amazing.

  3. La Croix is addicting, isn't it? At the production company I used to work at we'd go through a case a day! It was kind of ridiculous. :)

    1. The husband thinks it is absolutely disgusting, but I just love it! I can't get enough of the coconut flavor at the moment, but I have also had my time with berry, ha.
