Guinness-Sauced Sundaes & Happy Feet

Guinness cupcakes, corned beef and cabbage, Irish coffee, Bailey's brownies: Are you tired of hearing about St. Patrick's Day yet? Me neither, which is exactly why I have no shame posting about the holiday a whole day late.

I was dying to serve a Guinness dessert to the fam last week. (We were lucky enough to spend spring break with my momma, stepdaddy, Big Little Brother and his fab gf.) Naturally that meant I pored over Pinterest during my wee-hour pumping sessions until I found something that A) sounded delicious and B) used Guinness.

What I decided to go with was a recipe for Guinness sundaes, essentially Guinness sauce that looked to-die-for over ice cream.

It was thick and syrupy, after, oh, an hour or so.


And it tasted great over chocolate ice cream.


Actually, it probably tasted better over chocolate ice cream than vanilla.


But if you ask the husband, he'd tell you to save the time and just pour molasses over your dessert. The sauce was delicious, and I thought it made for a nice end to our St. Patrick's Day dinner, which we ate two days early, but it was a bit time-consuming. And I'd probably have enjoyed the Guinness more by itself or with ice cream as a float.

Good thing there's always next year.

  1. I'm not a Guinness fan but Hubby is so he'd probably like this (and not think that you could just pour molasses over ice cream...that was a hoot). Me, I agree that it wouldn't be worth the time. Heck, just pop open a bottle of caramel syrup and I'm good to go. You can even skip the ice cream. :)

    1. I hate to say it, but it really wasn't worth the effort. That dang stuff took an hour if not an hour and 15 to thicken. Note teo self: Next time drink the Guinness and buy caramel sauce. i like the way you think.
