It's Like Pizza

He folds my laundry, makes sure the air filter is changed regularly, takes the garbage out and balances the checkbook. The list of things the husband does goes on and on. I probably shouldn't list all of them, though, you know, in case he decides to read this post. We wouldn't want all of this praise to go straight to his head.

Long story short: I already knew I married a good man. But when I suggested we have low-carb pizza for dinner - pizza that wouldn't have a nice wheaty crust - and my carbaholic husband went along with it, I knew I picked the best husband of all. 




I honestly didn't think I could make a low-carb pizza that would taste anything like real pizza. I figured I'd follow the recipe an end up with something that kind of tasted like pizza but basically tasted a bit weird. Luckily that wasn't the case.

The husband admitted this wasn't exactly like the real thing. We couldn't pick ours up like good New York-style slices, but we do have forks in this house. And although the crust, thanks to the eggs, was a little fluffier than the thin and crispy crust we adore, it was tasty. The husband
 even had a slice for breakfast the next morning before taking the dogs out.


Low-Carb Pizza

4 ounces low-fat cream cheese, softened
2 eggs
6 tablespoons egg whites
1/3 cup half-and-half
1/4 cup Parmesan
1/2 teaspoon Italian seasoning
1/4 teaspoon garlic powder
2 cups part-skim mozzarella, shredded
1/2 cup tomato sauce
12 slices turkey pepperoni, optional topping
1/2 cup onion, optional topping
1/2 cup part-skim mozzarella, shredded

Preheat the oven to 375 degrees F.


Whip the cream cheese, eggs and egg whites in a large bowl until completely combined. Stir in the half-and-half, Parmesan, Italian seasoning and garlic powder. 


Spray a 13x9 pan with nonstick cooking spray, and spread 2 cups mozzarella on the bottom of the dish. Pour the egg mixture on top of the cheese.


Bake for 30 minutes or until set and starting to brown.


Spread the cheese over the "crust," add the last 1/2 cup mozzarella, pepperoni and onions, if using, or add your preferred toppings.


Bake another 5 minutes or so or until everything is hot and bubbly.

Makes 8 slices

As per my calculations, each slice contains: 172 calories, 13 g fat, 3 g carbs, .3 g fiber, 17 g protein


As much as we liked this recipe, I think I'll be tweaking it a little for next time. The slices were kind of high in fat. Let's be honest, I didn't want to eat just one! So I plan to work on the crust a bit and see if I can't shave off a few more grams of fat. 

I may even see if the husband will get a little creative with the toppings next time. Mushrooms and meatballs perhaps? We shall see.

  2. With that eggy kind of crust, this would make an awesome breakfast pizza even if you tweaked it for the evening meal. Throw on bacon, mushrooms and sauteed onions, then crack a fried egg over it all when it's out of the oven.

    Anyhow, as is, it still looks amazing. Yeah, I can tell that your husband is way cool.
